Snack time...Kale chips!

If you are following a paleo diet, I highly recommend joining a CSA. Basically, you pay for a "share" of a farm's produce in advance, and for the season (the amount of weeks varies, mine is 31 weeks a year) you get fresh produce weekly. This has certainly inspired me to try new recipes and has made my son aware of so many new veggies. He loves "vegetable day", naming all the fruits and veggies and helping me prepare them. One of his favorite things to eat are kale chips, and they are super easy to make. 

What you need: 

A bunch of kale
Olive oil (a few tablespoons, depending on the amount of kale) 
Salt
4 or 5 cloves of garlic (optional)

How to make kale chips: 
Preheat the oven to 300 degrees. 
1. Rinse kale leaves and pat dry.
2. Rip the leaves into bite size pieces, removing the leafy part from the long stem down the middle. Discard the stem.
3. Place kale in a large bowl, and drizzle olive oil over the leaves. Mix with your hands, massaging the leaves so that they are coated with olive oil. It should only be enough to coat the leaves, they shouldn't be dripping with oil. 
4. If adding garlic, mince the cloves into the bowl with the kale leaves and mix. 
5. Place the leaves in a single layer on a baking sheet. 
6. Bake in the oven at 300 degrees for about 15 minutes. The leaves should be crispy on the edges. 
7. Remove from oven and sprinkle generously with salt. 
8. Serve! 

My family will devour an entire plate of these in about 5 minutes. I had to put some aside for my husband, who wasn't in the room, because my son and I were eating them all!

Welcome!

My family and I have been on a quest to achieve good health. It started when my son was born, because I was breastfeeding and I knew that anything I ate nourished my body and his. I wanted to make better choices. After some health issues surfaced with my husband, I knew we had to continue making changes. Fast forward to today, and we are a paleo family. The biggest challenge I have had is finding foods for my son that are healthy, paleo, and fun! I want to share some of his favorites, and hopefully give other paleo families ideas. Feel free to share your favorites as well!
